
In a recent turn of events, I have opted to be a flexitarian. What this means, is that I am eating less meat and more plant based foods. My body feels so much better! Although I still like to eat eggs, this breakfast scramble is a great alternative for someone who chooses to be vegan. If you eat the same things every day, your body gets used to the way it digests that particular food and no longer burns those calories the same. By switching up your meals, your body works harder to break down new foods. So be bold, be brave and try my vegan tofu scramble!
Vegan Tofu Scramble
Serving Size: 1
Prep Time: 5 minutes
Cook Time: 15 minutes

Ingredients
2 Garlic Cloves
1 onion ring slice, chopped
A smidge of Olive Oil
1/4 of a Firm Tofu Block
Salt and Pepper
Assorted Veggies –
Mushrooms
Spinach
Tomatoes
Hot Sauce – optional
Instructions
Begin by heating a small skillet over med-high heat. Add a little olive oil with your chopped onion and garlic. Allow these to become fragrant and soft. Perhaps about 3 minutes. Add Tofu to skillet, salt and pepper, then mix and let brown on all sides. You can use a wooden spoon to break up the tofu.
When your tofu is browned, add your veggies with a tbsp or two of water. Mix all together and let veggies become soft for about 3-4 minutes.
Remove from heat and garnish with avocado and/or hot sauce.
Notes
You can switch out any veggies used! Look for something that needs to be eaten in your fridge, its perfect for this scramble!
My favorite hot sauce is one I picked up in Vietnam, (you can read about that here). However, you can use whatever hot sauce you prefer with breakfast.
