
As of recent, I am in love with parsnips! I don’t know why, but I find them superb and delicious. Experimenting with different root vegetables is always fun, but this one takes the cake! It still gives you that warm fuzzy feeling that mashed potatoes do, but with a elegant step up! Try Parsnip Potato Mash tonight!
Parsnip Potato Mash
Serving Size: 3-4
Prep Time: 10 Minutes
Cook Time: 20 minutes

Ingredients
3 Gold Potatoes
3 Parsnips
Shake of Salt
3 Thyme Springs
1/4 Cup Milk
1 Tbsp Butter
Instructions
Bring a pot of water to boil on high heat.
Peel potatoes and parsnips. Dice in chunks.
Place potatoes, parsnips, thyme and salt into pot of water.
Allow to boil for 15-20 minutes or until soft
Drain water.
Add butter and milk. Begin mashing potatoes and parsnips with a wooden spoon or hand mixer.
Garnish with Thyme
Notes
You can add milk if you’re consistency is too think. You’ll want a smooth mash, but not too creamy.
