
I am all about that easy breakfast sandwich. Easy, healthy and hearty? Well, you’ve just won my heart! And my tummy… Check out this perfect egg avocado sprout sandwich for breakfast! It’s also vegetarian and incredibly delicious!
Egg Avocado Sprout Sandwich

Ingredients
2 Slices of Whole Grain Nutty Bread
1 Whole Avocado
1 Fried Egg
1/2 Cup Fresh Sprouts
Salt and Pepper
Pinch of Parsley
Instructions
Toast your bread in a toaster for a nice golden crunchy flavor.
Heat a skillet over med-high heat. Spray coconut oil in the pan. Crack an egg into the pan: Salt, pepper and parsley. Allow to cook almost all of the way through and flip. Cook for less than one minute on the other side.
Spread half an avocado on each slice of bread. Add a little salt. Place a nice bunch of sprouts on one side. Top with egg and fold other slice over.
