
Some people love beets and some people absolutely hate them… For me, it depends on the day. But these easy stacks make any dinner party a hit! They are so simple, yet so yummy. Beet and Goat Cheese Stacks

Ingredients
4 Beets (red or gold) de-rooted
1 cup soft goat cheese
1/2 tbsp roughly chopped sage
1/2 tbsp roughly chopped thyme
1/2 tbsp roughly chopped rosemary
1-2 tbsp olive oil
2 tbsp roughly chopped almonds
Instructions
Bring a pot of water to boil. Add beets and allow to boil for about an hour or until soft.
Drain the pot and let beets cool down enough to touch them. Once cool, gently peel off outer skin layer.
While your beets are cooling, mix your goat cheese and herbs together in a small bowl.
After you’ve peeled your beets, gently slice them into three even slices. Set the bottom layer down first and spread or gently press a tbsp worth of goat cheese mixture onto slice. Stack the middle slice on top and repeat with the next layer.
Repeat these steps for all four beets.
Sprinkle crushed almonds on the tops and drizzle with olive oil.
